Let me walk you through my process for making this dish – it's truly one of my favorite 'Dinner Ideas' to 'Spice up your Nights'! It’s surprisingly simple and always gets rave reviews. First things first, get your jumbo shells cooking according to package directions, but make sure they're just al dente. You don't want them too soft because they'll bake more later. While those are bubbling, I like to quickly cook my salmon fillet. You can bake, pan-sear, or even microwave it until it’s cooked through and flakes easily. Set it aside to cool slightly, then flake it into small pieces. Next, wilt your bag of spinach in a pan with a little olive oil or butter until it’s just tender. Make sure to squeeze out as much excess water as possible – this step is key to avoiding a watery filling! Now for the star of the show: the creamy filling! In a large bowl, combine your flaked salmon, the well-drained spinach, a generous amount of mozzarella cheese, and a good portion of fresh Parmesan. Pour in a splash of heavy cream – start with about half a cup and add more if needed, you want it creamy but not soupy. This is where your seasonings come in!
