Liver and Onions

Liver and Onions

Ingredients

1 lb beef liver, cut into bite-sized pieces

1 large onion, thinly sliced

1 cup beef broth

1/2 cup milk (for soaking the liver)

1/3 cup all-purpose flour

2 tablespoons oil or butter

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon paprika (optional)

Instructions

Place the liver pieces in a bowl, cover with milk, and soak for 30–60 minutes to reduce bitterness. Drain and pat dry.

In a shallow dish, mix the flour, salt, black pepper, garlic powder, and paprika. Lightly dredge the liver pieces in the flour mixture.

Heat oil or butter in a skillet over medium heat. Add the sliced onions and cook until soft and lightly caramelized. Remove onions and set aside.

In the same skillet, add the coated liver pieces in a single layer. Cook for 2–3 minutes per side until browned but still tender.

Return the onions to the skillet, pour in the beef broth, and gently stir. Simmer for 5–8 minutes until the gravy thickens and coats the liver and onions evenly.

... Read moreIf you're new to cooking liver, soaking it in milk before cooking is a game changer that I’ve found really helps mellow out the strong, sometimes bitter flavor, making the dish much more approachable. I usually soak mine for about 45 minutes, which balances tenderness and flavor without leaning too far into the milk taste. When cooking the onions, take your time to caramelize them slowly over medium heat – this adds a natural sweetness that complements the savory liver perfectly. Using beef broth rather than water to create the gravy really enhances the richness of the sauce. I often add a splash of Worcestershire sauce or a pinch of thyme for an extra layer of depth. Make sure to not overcook the liver; it should remain tender and slightly pink inside, usually about 2–3 minutes per side. Overcooking leads to a tough texture, which can be a turnoff. For variations, some people like to add a bit of bacon or cook the onions with a touch of balsamic vinegar for tanginess. Also, experimenting with different spices like smoked paprika or cayenne can customize the flavor to your preference. Pair this dish with creamy mashed potatoes or buttered noodles to soak up that flavorful gravy. It’s a comforting, hearty meal that brings soulful flavors to your table. This traditional recipe reminds me of wholesome family dinners, where simple ingredients come together to create something truly satisfying.
