I’ve been counting down to soup season and this is the recipe that officially kicks it off. Zuppa Toscana is hearty, creamy, and full of flavor and it’s my go-to comfort meal every fall 🤎. I used my favorite @meadowgolddairy heavy cream to give it a creamy, hearty base.
Ingredients (4 servings)
3-4 russet potatoes
3-4 cups of chopped kale
1/2 white onion - diced
1 tablespoon of minced garlic
6 cups of chicken broth
2 cups of water
2 cups of Meadow Gold heavy cream
Salt and black pepper to taste
Optional: bacon & parmesan cheese for topping
Instructions:
1. Start by prepping your vegetables - wash, peel, and dice your potatoes into small cubes so they cook evenly. Wash and chop your kale, and dice your onion.
2. In a large pot or Dutch oven, cook your bacon over medium heat until crispy. Once done, remove the bacon and set it aside to use as a topping later.
3. In the same pot, add in your Italian sausage. Break it up with a spoon and cook until browned. Remove the sausage and set it aside to add back in later.
4. Add the diced onions into the pot and saute until translucent.
5. Add in your minced garlic and cook until fragrant.
6. Stir in your diced potatoes, Italian sausage, chicken broth and water.
7. Season with salt and pepper, then bring it to a boil. Cook for about 20 minutes, or until the potatoes are tender.
8. Once the potatoes are soft, add in your chopped kale and Meadow Gold heavy cream
9. Stir to combine and let it simmer for another 5 minutes.
10. Taste and adjust seasoning as needed. Optionally, top with grated parmesan and or crispy bacon.
