Blueberry Pancakes but Make it COFFEE
It's a good day to have a good day! Pancake / Cookie Syrup:
1/2 cup brown sugar & water
1/4 cup maple syrup
Heat in small saucepan until simmering and sugar is dissolved. Stir in a sprinkle of sea salt 1 tablesooon of butter and a dash of vanilla. Store in sealed container in the fridge and use for cookie and pancake lattes. Blueberry Syrup:
1 cup fresh blueberries 1 tablespoon honev (add more if vou like vour syrups reallv sweet sprinkle salt 1/2 cup water dash of vanilla Combine evervthina in a saucepan and brinc to a low simmer and let cook for about 10 min on low heat. I used a potatoe masher to pop my berries at this point (use a fork of whatever vou have) and extract all the blueberry flavor. You can then remove from heat. and strain into a glass storage container. I save the pulp that 1 strain off to put in my breakfast bowls with yogurt and granola!
