Rasberry Chia Seed Pudding
This is so good and very convenient to pack in my lunch box on long work days! Adjust the sweetness to your preference and switch out the milk for your favorite. I enjoy the creamy consistency that coconut milk gives the pudding!
1 can full fat coconut milk
3/4 cup fresh raspberries
1 tablespoon honey
sprinkle salt and small splash vanilla
Blend everything in your blender until smooth and then fold in 1/3 cup chia seeds and divide into your preferred portions. I always chill overnight so it has ample time to set up and for the chia seeds to get soft.
