BRAISED LAMB & RAINBOW CARROTS🥕
FOR THE RAINBOW CARROTS 🥕
- peel carrots and add to a sheet pan
-season rainbow carrots with thyme, salt and pepper, and rosemary (to taste)
- drizzle olive oil on carrots and mix with hands
-roast at 400f until fork tender (15-20 min usually)
FOR THE LAMB LOIN CHOP
- season chops with thyme, salt and pepper, and rosemary (to taste)
-sear on high heat until browned
- lower temp to mediumish until internal temp reaches 125-135
FOR THE SAUCE
- small dice 1/2- 1 shallot
- cook shallot in a bit of evoo until golden
- add equal parts chicken broth and balsamic vinegar as well as rosemary sprig and simmer until reduced
-lower heat a bit and stir in butter
-add meat back in and braise chops with the sauce
turn heat off and let sit for a few minutes for the meat to rest before plating & eating
I served this with a basic mashed potato recipe & some carrot top micro greens to garnish !
