Let’s Transplant Our Green Onions 🧅

To regrow green onions, simply cut off the root ends of a bunch of green onions, leaving about an inch of the white bulb attached, then place them root-side down in a shallow dish with a small amount of water, keeping the green tops above water level; set the dish in a sunny spot and change the water every few days; once the green shoots reach a desirable length, you can plant the root end in soil if you want to continue growing them further.

Keep the roots intact: The most important part is to keep the root bulb attached when cutting the green onions.

Water level: Only add enough water to cover the roots, not the green tops.

Sunlight: Place the container in a sunny spot to promote growth.

I started doing this a while back, partly to save a few pennies and partly out of curiosity, and now I can't imagine buying green onions constantly. This little hack not only saves money but also reduces food waste – a total win-win in my book! While the original post gives you the basic steps, I've picked up a few extra tips and tricks along my journey as a home gardener that I wanted to share. Troubleshooting Common Issues (Because we all have them!): Slow Growth or No Growth: Make sure your green onion scraps are fresh. Older, dried-out ends might not have enough energy left to regrow. Also, sunlight is key! If they're looking sluggish, try moving them to a brighter, sunnier spot. Mold or Slimy Water: This happens, especially if you forget to change the water. It's crucial to refresh the water every day or two. If you see sliminess, give the roots a gentle rinse under running water before putting them back in fresh water. I've found clear glass jars are great for monitoring water clarity. Weak, Pale Shoots: This usually points to a lack of light. Green onions love a bright, sunny windowsill. If they're stretching and looking pale, they're probably reaching for more sun. Taking Your Regrown Onions to the Next Level: Transplanting to Soil The initial water method is fantastic for a quick harvest, but if you want truly robust, long-lasting green onions, transplanting them into soil is the way to go. Once your green onions have regrown a good 3-5 inches in water and developed a nice network of roots, they're ready for their new home. I usually pot my green onions in a small container, about 4-6 inches deep, with good quality potting mix. Make sure the pot has drainage holes! Gently bury the white root end, leaving the green shoots exposed. Water them immediately after planting. Why transplant to soil? In soil, they get access to more nutrients than just water can provide. This leads to stronger, thicker green onions and a much longer harvest period. You can keep them on your windowsill or move them outdoors if you have a garden space. Just remember to water regularly and perhaps give them a little organic fertilizer every month or so. Harvesting Continuously: The beauty of regrowing green onions, especially in soil, is that you can harvest them repeatedly. When you need some for cooking, simply snip off the green tops with scissors, leaving about an inch or two of the plant still in the soil. They will regrow from the cut point! I've had some plants keep producing for months this way. Beyond Green Onions: What Else Can You Regrow? This concept of growing from food scraps isn't limited to just green onions! I've also had fun regrowing romaine lettuce hearts, celery bases, and even garlic cloves. It's amazing how much food we can get from what we usually throw away. It’s a rewarding way to feel more connected to your food and reduce waste, one kitchen scrap at a time! Give it a try, and you'll be amazed at your own mini-farm!
