Cranberry Jelly Recipe🫙✨🌿

This is super easy to make & very beginner friendly for learning how to can & preserve!! Bonus because i hate drinking cranberry juice but it’s so good for you, so this is perfect on biscuits or toast and still has so many positives for your body!☺️

✨Ingredients:

- 4 cups of cranberry juice (i use a low sugar option, but it’s up to you!)

- 1 box Pectin

- 4 cups of sugar

✨Instructions:

1) pour your cranberry juice into your pot on medium high

2) once the juice is warmed up ( doesn’t have to be boiling yet ) add your pectin & stir frequently

3) once this comes to a boil add in your sugar & keep stirring until all sugar is mixed in and melted

4) let it sit at a rolling boil for 2-3 minutes

5) Pour into your jelly jars & water bath for about 20 minutes.

6) Once taken out, let them settle for 12-24 hours & you’ll have your cranberry jelly!🌿🫙✨

When I first started making my own jelly, I was surprised by how much there is to learn beyond just the basic ingredients. First off, let's talk about why cranberries are so amazing! Like I mentioned, I’m not a huge fan of cranberry juice, but these little red berries are packed with antioxidants. They’re super good for urinary tract health, and some studies even suggest they can help with heart health and give your immune system a boost. So, making them into a delicious homemade cranberry jelly is a fantastic way to get those benefits without having to drink the tart juice directly. It feels good knowing I'm making something healthy and yummy right at home. Now, for canning newbies, here are a few things I wish I knew when I started. Sterilizing your jelly jars properly is absolutely key! Before you even think about pouring in your hot jelly, make sure your jars and lids are thoroughly cleaned and sterilized. You can do this by boiling them for 10 minutes, or running them through a super-hot cycle in your dishwasher. This prevents any unwanted bacteria from spoiling your beautiful homemade jelly. Also, make sure to leave about a quarter-inch of headspace in your jars – that's the space between the jelly and the rim of the jar – this is crucial for a good seal. And don't forget to wipe the rims clean before putting on the lids! A clean rim ensures a tight, secure seal. Sometimes, beginners worry about their jelly not setting. If your cranberry jelly doesn't seem to firm up after 12-24 hours, don't panic! It might just need a little more time, especially if your kitchen is cool. If it's still too runny after a couple of days, you can reprocess it. Just pour it back into a pot, add a bit more pectin or a pectin-sugar mixture (always check your pectin instructions for proportions), bring it back to a rolling boil for a minute or two, and then pour it back into clean, hot jars and re-water bath them. I've had to do this once, and it worked out perfectly! Finally, once you've got your beautiful jars of cranberry jelly, what else can you do with them besides toast and biscuits? I love using it as a glaze for roasted chicken or pork – just warm it up slightly and brush it on during the last few minutes of cooking. It adds such a lovely tangy-sweet flavor! You can also swirl it into yogurt, oatmeal, or even use it as a filling for tarts or thumbprint cookies. It’s so versatile and makes for a fantastic homemade gift during the holidays!
