ALDI Dinner / Meal Prep

If you want to eat healthy on a budget then you definitely need to start shopping at ALDI especially for your basics like meat, dairy, veggies and fruit!

I am lucky that it is located right next door to my gym so I can easily run there after to grab something for a quick meal and this one is my current fav!

All you need:

Tostados

Bell peppers

Carne Asada taco meat

Taco seasoning pack

Cheese of choice

Pico de gallo of choice (love the mango one)

And if you want any extras go for it! Since we are trying to stay healthy we keep it simple with no extra sauces (you won’t need it anyways)

This is super fast to make too as all you are cooking is the meat and peppers! Then you add everything on top of the tostado and your good to go!

If you are making this just for one, this is a great meal prep.

I would prep all the meat and peppers and then separate that into containers with your pico on the side. Add two tostados to some little baggy and lunch of dinner is set for the week.

Easy Meal Prep
I usually do my meal prep on Sunday. It takes about 1 hour to get everything prepped/cooked and put into containers. I make 5-6 meals for breakfast, lunch, and dinner. Saturday and Sunday I don’t necessarily plan ahead for those days so I eat whatever I am feeling. Meal planning never works for me
