Roasting the garlic whole until soft and squeezing it into the sauce adds such a rich, mellow garlic flavor that’s different from simply mincing raw garlic. The cherry tomatoes burst in the oven, releasing their natural sweetness and creating a saucy, juicy base that beautifully complements the creamy Boursin cheese and heavy cream. Using fresh spinach not only adds vibrant color but also a nutritious boost without overpowering the subtle flavors. I personally like using penne or fusilli pasta because their ridges help hold onto the sauce well, making each bite satisfying. However, any pasta shape you have on hand works great! To add a bit more depth, sometimes I toss in other veggies like sautéed mushrooms or roasted bell peppers, which pair wonderfully with the creamy tomato sauce. For a protein option, grilled chicken or sautéed shrimp can easily be incorporated to turn this into a heartier meal. When broiling the pasta topped with shredded cheese, keep a close eye to get a golden bubbly crust but avoid burning. The melted mozzarella or parmesan adds a lovely texture contrast. For those who enjoy a kick, sprinkling chili flakes as a finishing touch provides a nice warmth that balances the creaminess. Overall, this recipe is a perfect blend of comfort and freshness, suitable for casual family dinners or impressing friends with minimal effort. Plus, it’s an excellent way to use up fresh spinach and cherry tomatoes, bringing seasonal flavors to your table effortlessly.
