Tinga de Pollo
This is for sure a favorite with my kids! Super easy to make, and there are multiple ways to enjoy.
Ingredients
Chicken (you can use chicken breasts or thighs)
Bay Leafs
Garlic
Tomatoes
Chipotle
Onions
Caldo de tomate
Salt
First I start off by cooking the chicken. I place it in a large pot with some water, a couple garlic cloves, a couple bay leafs and bring to a boil. Let it cook until done.
I then remove the chicken, shred it. I heat a large pan with some avocado oil. I slice onion and then add to the hot pan to start to sauté. I then add the shredded chicken to the pan and season and start to brown the chicken just a little with the onion.
While that is cooking in the pan, I grab my blender and add the tomato, garlic, a couple chipotle peppers, onion, some caldo de tomate, and some salt. I then add water and blend all together. You can taste and add more salt or chipotle depending on how spicy you want it.
Once it is all blended together, I add to the pan with the chicken and onion and bring it to a simmer, I mix and cover it to simmer for about 10-15 mins to infuse the spice flavor with the chicken.
You can enjoy your Tinga de pollo with just adding some shredded lettuce, avocado, sour cream, with tostadas. Or you can use it burritos, sopes, and more!
