Chicken Bryan
I just made this and it was sooooo good. I used pesto instead of basil leaves
Ingredients:
• 4 thin-sliced chicken breasts
• 2 tbsp olive oil
• 3 cloves garlic, minced
• ½ cup sun-dried tomatoes (packed in oil), drained and chopped
• ½ cup chicken broth
• 2 tbsp lemon juice
• 3 tbsp unsalted butter
• 4 oz honey goat cheese (sliced or crumbled)
• ¼ cup prepared pesto
• Salt and pepper to taste
Instructions:
1. Cook the Chicken:
• Heat olive oil in a large skillet over medium heat.
• Season the chicken breasts with salt and pepper.
• Sear the chicken for about 3-4 minutes per side, or until fully cooked. Remove from the pan and set aside.
2. Make the Sauce:
• In the same skillet, add a little more oil if needed and sauté the minced garlic for about 30 seconds until fragrant.
• Add the sun-dried tomatoes, chicken broth, and lemon juice. Stir and let it simmer for 2-3 minutes.
• Reduce the heat to low and whisk in the butter until melted and combined.
3. Assemble the Dish:
• Return the cooked chicken to the skillet, spooning some of the sauce over each piece.
• Place a slice or crumble of honey goat cheese on each chicken breast. Cover the pan for 1-2 minutes to let the cheese soften.
4. Finish with Pesto:
• Drizzle each piece with a spoonful of pesto.
• Serve warm with your favorite side (pasta, roasted veggies, or mashed potatoes work great!).
