... Read moreHey foodies! If you're like me and love the idea of a rich, spicy 'vodka' pasta but either don't keep vodka on hand, prefer to avoid alcohol, or are cooking for a family, then you're in the right place! My recipe for Chicken 'Vodka' Style Pasta (no actual vodka!) has become a family favorite, and I promise you won't miss the traditional spirit one bit. It's truly a delicious dinner idea for any night of the week. Now, you might be wondering, how do you get that classic 'vodka' pasta flavor and creaminess without the vodka? It's all about balancing your ingredients and building layers of flavor. The tomato paste, heavy cream, and a touch of starchy pasta water work together to create an incredibly silky and flavorful sauce that coats every piece of rigatoni beautifully. My trick for that perfect creamy texture is letting the sauce simmer just enough before adding the cheeses; it really allows everything to meld together. For those who love a good kick, like I do, don't shy away from the cayenne pepper and red pepper flakes! You can easily adjust the spice level to your preference. If you're new to spicy cooking, start with a smaller amount and add more to taste. For a milder dish, you could even omit the cayenne entirely and just rely on a pinch of paprika for color and warmth. On the other hand, if you want something truly fiery, consider adding a fresh diced jalapeño or serrano pepper along with the onion, or a big pinch of crushed red pepper flakes at the end. These small additions can transform a delicious dinner into an unforgettable culinary adventure! I've also found that the quality of your chicken and how you cook it makes a huge difference. Marinating the chicken briefly in the olive oil and seasonings – salt, pepper, paprika, cayenne, and onion powder – not only infuses it with flavor but also helps tenderize it. Cooking it quickly on each side to get a nice sear, then reducing the heat and covering it, ensures it stays juicy and cooks through evenly. This makes for a much more satisfying meal. This dish is so versatile. While I love it with chicken, you could easily make it vegetarian by skipping the chicken and adding sautéed mushrooms or spinach. It’s a fantastic canvas for whatever you have in your fridge. Garnish with fresh basil, and maybe a little extra Parmesan, and you've got yourself a truly delicious and easy dinner. Trust me, once you try this 'no vodka' version, it might just become your new staple!
