This week we made homemade vanilla wafers. Let me just say when the dough is delicious that’s how you know the final results will be good. Most of the ingredients are probably already in your pantry!

Vanilla wafers are a classic dessert loved by many, and making them at home can be both fun and rewarding. Not only can you control the ingredients, ensuring freshness, but you can also customize the flavors to your liking. Start by gathering the following essential ingredients: all-purpose flour, baking powder, kosher salt, unsalted butter, confectioners' sugar, granulated sugar, eggs, vanilla extract, and whole milk. Begin your baking adventure by preheating your oven to 350°F (175°C). This temperature is ideal for achieving that perfect crispy exterior while keeping the insides tender. In a medium bowl, sift the flour, baking powder, and salt together, to ensure a uniform texture in your dough. In a separate bowl, cream together the butter and confectioners' sugar for at least two minutes. This step is crucial as it adds air to the mixture, resulting in a lighter, fluffier wafer. Once your butter and sugar are well combined, add the egg, vanilla, and milk, mixing until smooth. Gradually incorporate the flour mixture until fully combined. To enhance the final product's flavor, consider adding a touch of almond extract or citrus zest. Chill the dough for 10-15 minutes; this makes it easier to handle when scooping. Finally, scoop the dough onto parchment-lined baking sheets, with enough space for spreading, and bake for 12-15 minutes, keeping an eye on them to prevent over-baking.
