Pizza Quesadillas
One of the most simple recipes I’ve made recently. So quick and the kids absolutely loved it! I paired it with some homemade Alfredo shells. 🤌🏼
Ingredients
Pizza Sauce
Mozzarella cheese
Burrito tortillas
Pepperonis/Any pizza toppings you like
1. Spread pizza sauce on tortilla.
2. Add cheese to half and then all toppings you like.
3. Add more cheese and close the tortilla.
4. Melt butter in a frying pan and place the quesadilla in the pan. (I add more butter to the top while the bottom cooks.)
5. Once it’s as crispy as you like, remove from pan and cut.
6. Serve with pasta or a side salad. Enjoy!
Making pizza quesadillas at home is not only a fun activity but also allows you to customize the flavors exactly to your liking. I’ve found that using burrito-sized tortillas gives the perfect crispy texture after frying with a bit of butter on both sides. One tip I’ve learned is to sprinkle a little extra cheese on the outer side before closing the tortilla—this helps seal the edges and creates a cheesy crust. You can really get creative with toppings beyond pepperoni. Vegetables like bell peppers, mushrooms, or even jalapeños add a fresh and spicy twist. If you want to keep it vegetarian, try roasted veggies or caramelized onions paired with a drizzle of creamy Alfredo sauce on the side, just like I did with my pasta shells. When cooking, medium heat works best to melt the cheese thoroughly without burning the tortilla. I usually flip the quesadilla a couple of times to get an even golden brown on each side. Serving with a crisp side salad or pasta enhances the meal, making it more balanced and satisfying. Plus, it’s a great way to sneak in some extra veggies! Pizza quesadillas are a fantastic option for busy weeknights or when you want to whip up a meal that the whole family will enjoy.
