Cheesy Shrimp Stuffed Poblano Peppers 🫑

How to make:

🫑Cut poblanos in half and scoop out seeds, save them for later though! Also chop 1/2 a Spanish onion and as much garlic as desired and set aside. Air fry the poblanos on Roast setting for 10 minutes until they’re soft but not burned.

🫑 While the peppers are cooking add medium-large shrimp, 2 packets of sazón seasoning, and the garlic, onion, and poblano seeds from before.

🫑 Set poblanos aside when they’re done being softened and once the shrimp mix is cooked, evenly spoon in the shrimp onions and garlic along with goat cheese crumbles, and if you like it extra cheesy, Monterey Jack or sharp cheddar would be delicious in this.

🫑Air Fry on Bake setting for 20-30 minutes or until the cheese is melted nicely with the shrimp.

The poblano pepper is so misunderstood as it has more of a meaty umami flavor than spicy peppers. It’s sort of like an eggplant texture to be but has a smoky flavor.

... Read moreI'm absolutely hooked on these cheesy shrimp stuffed poblano peppers, and once you try them, you will be too! They've become a staple in my kitchen because they're not just delicious, but also surprisingly versatile and fit perfectly into a healthy eating plan. The poblano pepper itself is a game-changer – it's got this incredible meaty, smoky flavor that's miles away from just being a spicy kick. It truly adds a unique depth to the dish that you won't get with regular bell peppers. Now, let's talk about that shrimp filling! While the original recipe uses a classic sazón seasoning, which is fantastic, I sometimes like to switch things up. For a different vibe, I’ll often season my shrimp with a blend of paprika, a hint of smoked paprika, garlic powder, onion powder, and a pinch of cayenne for a little warmth. If I'm feeling adventurous, a homemade Cajun seasoning blend (think thyme, oregano, and more black pepper) can really elevate the flavor. Getting the seasoning right is crucial for juicy, flavorful shrimp that stands out in your stuffed peppers. One common question I see is about making stuffed peppers heartier, especially for those who like rice. If you're looking to make this a more substantial meal, incorporating rice into your shrimp filling is a fantastic idea! I simply cook about half a cup of rice (white or brown, depending on my mood) beforehand and then mix it in with the cooked shrimp, onions, garlic, and seasoning. It adds a wonderful texture and makes the dish incredibly filling. You could even add some finely diced tomatoes to the filling for an extra burst of freshness and color, which I've found pairs beautifully with the shrimp and cheese. Beyond the Monterey Jack and goat cheese mentioned, don't be afraid to experiment with other cheeses. A sharp cheddar adds a robust flavor, while a little bit of cream cheese mixed into the filling can make it extra creamy and decadent. Sometimes, I even sprinkle a dash of Parmesan on top for a golden, crispy crust when they come out of the air fryer. As for what to serve alongside these beauties, they are quite satisfying on their own, but a simple side dish can make for a complete meal. I often pair them with a light, crisp green salad tossed in a vinaigrette to cut through the richness. Another favorite is a fresh avocado salsa or a quick cilantro-lime slaw. If you're keen on a sauce, a drizzle of homemade cilantro-lime crema (just Greek yogurt or sour cream mixed with lime juice and fresh cilantro) or even a mild, chunky salsa can really brighten up each bite. These peppers are naturally gluten-free and can easily be made keto-friendly by omitting the rice, making them a fantastic choice for a balanced and delicious dinner!
