Bubur Manado, also known as Tinutuan, is a beloved Indonesian porridge that brings together a wholesome mix of grains, vegetables, and aromatic herbs. This dish is particularly popular in Manado, the capital of North Sulawesi, known for its rich culinary traditions. Preparing Bubur Manado allows you to enjoy a comforting meal that's both hearty and packed with nutrients. The key ingredients include white rice, corn kernels, cassava, pumpkin, sweet potato, and green leafy vegetables such as spinach and kangkung. These components create a thick, creamy texture that’s satisfying and perfect for family meals. The addition of daun kemangi (lemon basil) and daun gedi offers a unique aromatic flavor characteristic of this dish. Cooking Bubur Manado involves simmering rice with water, daun salam (Indonesian bay leaves), and smashed lemongrass to infuse a subtle fragrance. Once the rice is partially cooked, the tubers and corn are added, making the porridge thicker and richer. Seasoning the porridge with salt and broth powder enhances the taste, but you can adjust seasoning according to your preference. One great aspect of Bubur Manado is its versatility. It can be served with savory accompaniments like sambal roa (spicy chili sauce made with smoked fish) or sambal terasi (chili shrimp paste), which balance the mildness of the porridge with a spicy kick. Fried salted fish or shredded cakalang fufu (smoked skipjack tuna) are traditional protein additions that complement the dish beautifully. Many Indonesian families, including those living abroad, cook Bubur Manado to maintain a connection to their culture and share traditional flavors with their children and loved ones. Preparing this dish can be a meaningful way to preserve culinary heritage, especially for those far from home. For those exploring Indonesian cuisine or looking for a nutritious, vegetable-rich meal, Bubur Manado is an excellent choice. The combination of sweet vegetables and aromatic herbs makes it both comforting and uniquely flavorful. Whether you are cooking for a small gathering or packing the recipe into your weekly meal plan, this porridge offers warmth and wholesomeness with every spoonful.
