🍲 Resep Soto Banjar (6 Porsi)
Bahan Utama:
• 1 ekor ayam kampung (±1 kg), potong 4–6 bagian
• 2 liter air
• 2 batang serai, memarkan
• 3 lembar daun salam
• 4 lembar daun jeruk
• 3 cm kayu manis
• 4 butir kapulaga
• 4 butir cengkeh
• 1 buah bunga lawang (pekak)
• Garam dan gula secukupnya
Bumbu Halus:
• 8 siung bawang merah
• 6 siung bawang putih
• 3 cm jahe
• 2 cm kunyit, bakar sebentar
• 1 sdt merica butir
Pelengkap:
• 200 g soun, seduh air panas, tiriskan
• 6 butir telur rebus, belah dua
• 200 g kentang, goreng lalu iris tipis (bisa juga perkedel kentang)
• 2 batang seledri, iris halus
• 2 batang daun bawang, iris tipis
• Bawang goreng secukupnya
• Jeruk limau/jeruk sambal secukupnya
• Sambal rawit sesuai selera
Cara Membuat:
1. Rebus ayam dengan air, buang kotoran yang mengapung.
2. Panaskan sedikit minyak, tumis bumbu halus hingga harum. Masukkan serai, salam, jeruk, kayu manis, kapulaga, cengkeh, dan bunga lawang. Aduk rata.
3. Masukkan tumisan bumbu ke dalam rebusan ayam. Tambahkan garam dan sedikit gula. Masak hingga ayam empuk dan kuah harum berbumbu.
4. Angkat ayam, suwir-suwir dagingnya, sisihkan.
5. Saring kuah agar lebih bening. Didihkan kembali sebentar.
6. Penyajian: dalam mangkuk, tata soun, suwiran ayam, kentang/perkedel, dan telur rebus. Siram kuah panas, lalu taburi daun bawang, seledri, dan bawang goreng. Sajikan dengan jeruk limau dan sambal rawit.
