Chop - Dry - Blend

Think of the top 3 seasonings besides salt and pepper that you use in your cooking. Now think of the vegetables that make up this seasoning, and imagine how easy it would be to make your own all purpose powder! Garlic and onion are the top two flavors i like to use, and this time I added a green pepper to the mix. So after chopping, dehydrating, and blending; my all purpose seasoning finally comes together and it smells wonderful. No added salts, sugars, or preservatives just a few ingredients and alot of flavor 😋

From my experience, the key to developing deep and complex flavors is in the drying process. When you dehydrate fresh vegetables like garlic, onion, and green pepper, their flavors intensify, transforming them into a concentrated seasoning powder with no need for additives like salt or preservatives. To start, I finely chop all the vegetables to ensure they dry evenly and quickly. Using a food dehydrator or a low oven setting works best — just be patient during this step, as proper dehydration is essential for shelf stability and optimal flavor. After drying, blending the mix into a fine powder unlocks the essence of each vegetable and allows you to sprinkle just the right amount in your dishes. I also appreciate that this DIY seasoning is freezer-friendly and can last alongside your other spices in the cabinet when dried properly, making it a convenient staple. Plus, it avoids the hidden sugars and salts often found in store-bought blends, giving you control over what you consume. Experimenting with different fresh ingredients can be fun — adding herbs like thyme or spices such as turmeric can customize your blend. But starting simple with garlic, onion, and green pepper provides a robust base that enhances soups, stews, roasted vegetables, marinades, and more. Overall, creating this seasoning blend not only elevates your cooking but also reduces waste by using fresh produce in an efficient way. If you love experimenting with seasoning and want to add zero additives to your food, this chop-dry-blend method is definitely worth trying!
