*pat dry your chicken fully and take out the insides, season the chicken with your choice of seasoning I used kinders cowboy butter and kinders the blend
**make sure you spray the Dutch oven completely with oil/avocado oil and place vegetables on the bottom of the Dutch oven, place your seasoned chicken on top of the vegetables breast side up and bake for 1 hour at 425 covered, after 1 hour I removed the cover and baked for an additional half hour
Cooking chicken in a Dutch oven is a fantastic way to prepare a wholesome meal that combines tender poultry with perfectly cooked vegetables. One tip I found valuable is to thoroughly pat dry the chicken before seasoning; this helps the skin crisp up beautifully during baking. Using avocado oil to grease the Dutch oven not only prevents sticking but also adds a subtle flavor and allows for an even heat distribution. I like to mix up the vegetables depending on what’s in season. Root vegetables like carrots and potatoes are classic and soak up the chicken juices wonderfully, while green beans add a nice contrast in texture. Layering the vegetables underneath the chicken allows them to steam and roast simultaneously, enhancing their flavors. Seasonings play a huge role in elevating this dish. While the original recipe used kinders cowboy butter and blend, experimenting with herbs like rosemary, thyme, or smoked paprika can add a delightful twist. Covering the Dutch oven during the first hour guarantees the chicken stays moist, then removing the lid for the last 30 minutes helps to brown and crisp the skin perfectly. One personal hack is to let the chicken rest outside the oven for about 10 minutes once cooked. This resting period allows the juices to redistribute, making every bite juicy and flavorful. Overall, cooking chicken in the Dutch oven is both convenient and satisfying, especially when balanced with your chosen vegetables and seasoning combinations.
