Juicy falling-off-the-bone oxtails! 🔥

It’s comfort food season so if you love fall and all warm foods that thrives in it then Iets make some coconut braised oxtail to keep us warm and cozy throughout the cold seasons🍁🍂🍃

Prepare the Oxtail:

Trim unwanted fat and clean oxtails with white vinegar and lemon juice. Season the oxtail with salt and pepper. Heat the oil in a large skillet over medium-high heat and brown the oxtail in batches (if necessary) until golden brown on all sides, about 4-5 minutes per side. Transfer to the slow cooker.

2. Sauté Aromatics:

In the same skillet, add the onions, garlic, and ginger. Sauté for 3-4 minutes until softened. Stir in the tomato paste and cook for another minute.

3. Add Coconut Base:

Pour in the coconut milk, soy sauce, fish sauce (if using), brown sugar, and beef broth. Stir well, scraping up any browned bits from the pan. Bring the mixture to a simmer.

4. Transfer to Slow Cooker:

Pour the coconut mixture over the oxtail in the slow cooker. Add the thyme sprigs, cinnamon stick, and fresh chilies (if using).

5. Slow Cook:

Cover and cook on low heat for 8-10 hours, or on high heat for 5-6 hours, until the oxtail is tender and the meat falls off the bone.

6. Adjust Seasoning:

Taste the sauce and adjust seasoning with kinders, pepper, or soy sauce.

7. Serve:

Garnish with cilantro or green onions. Serve with steamed rice or mashed potatoes.
