🍰 Mixed Berry Chantilly Cake 🍓🫐

This is my version of a Chantilly cake; light, creamy, and layered with fresh berry flavor 💕

This is a great cake for Mother’s Day because it feels elegant but still homemade, and the mix of berries makes it extra special. It’s the kind of cake that looks impressive but is actually very doable!

What I made: Chantilly cake with mixed berry filling

Why it’s meaningful: Soft cake + fresh berries + fluffy cream = a dessert that feels thoughtful and celebratory!

Cake Layers

Ingredients:

* 1 box white cake mix

* Ingredients listed on box (eggs, oil, water)

Instructions:

1. Prepare cake batter according to box directions

2. Divide into pans and bake as directed

3. Let cool completely before assembling

🍯 Simple Syrup

Ingredients:

* 1 cup sugar

* 1 cup water

Instructions:

1. Heat sugar + water until dissolved

2. Let cool

3. Lightly brush onto cake layers to keep them moist

🍓🫐Mixed Berry Filling

Ingredients:

* 1 cup frozen strawberries

* 1 cup frozen blueberries

* ¼–½ cup sugar (to taste)

* 1–2 tbsp lemon juice

* ½ cup blackberry jam

Instructions:

1. Cook strawberries, blueberries, sugar, and lemon juice over medium heat

2. Stir and mash slightly until thickened

3. Remove from heat and mix in blackberry jam

4. Let cool completely before using

Chantilly Cream

Ingredients:

* 2 cups heavy whipping cream

* ½ cup powdered sugar

* 1 tsp vanilla extract

Instructions:

1. Beat heavy cream until soft peaks form

2. Add powdered sugar + vanilla

3. Continue beating until fluffy and stable

Buttercream (for border + crumb coat)

Ingredients:

* 1 cup unsalted butter (softened)

* 3–4 cups powdered sugar

* 2–3 tbsp milk or cream

* 1 tsp vanilla

Instructions:

1. Beat butter until smooth

2. Add powdered sugar gradually

3. Mix in milk + vanilla until smooth and pipeable

Cream Cheese Whipped Frosting

Ingredients:

* 8 oz cream cheese (softened)

* 1 cup heavy whipping cream

* ¾ cup powdered sugar

* 1 tsp vanilla

Instructions:

1. Beat cream cheese until smooth

2. Add powdered sugar + vanilla

3. Slowly add heavy cream and whip until light and fluffy

🍰 Assembly

1. Level cake layers if needed

2. Brush each layer with simple syrup

3. Pipe a buttercream border around edges

4. Fill with Chantilly cream + berry filling

5. Repeat layers

6. Apply crumb coat and chill

7. Frost with cream cheese whipped frosting

✨ Tip: The buttercream border helps keep layers from sliding since Chantilly cream is very soft!
