My Favorite Salted Caramel Chocolate Cookies

Salted caramel chocolate cookies are one of my go-to desserts when I want something bakery-quality at home 🤎 I love making these because they taste fresher, I can control the sweetness, and honestly… nothing beats that melty caramel center straight out the oven.

Ingredients I used:

2 1/4 cups (281g) all-purpose flour, 1 tsp baking soda, 1 1/2 tsp cornstarch, 1/2 tsp salt, 3/4 cup melted unsalted butter, 3/4 cup brown sugar, 1/2 cup granulated sugar, 1 egg + 1 egg yolk, 2 tsp vanilla extract, 1 cup chocolate chips, 15 Rolo candies, and flaky sea salt.

How I make them:

First, I whisk together all my dry ingredients. In a separate bowl, I mix the melted butter and sugars until smooth, then whisk in the egg, extra yolk, and vanilla. Next, I combine wet and dry ingredients and fold in the chocolate chips. The dough will be soft, so I chill it for at least 3 hours (overnight is even better for thicker cookies).

After chilling, I let the dough sit for 10 minutes, then preheat my oven to 325°F. I scoop about 1.5 tbsp of dough, press a Rolo inside, cover it with more dough, and roll into a ball. Slightly flatten, add extra chocolate chips on top, and sprinkle with flaky sea salt. Bake for 12–13 minutes until soft in the center.

My personal twist:

I like mine slightly underbaked so they stay extra chewy with that gooey caramel middle. The sea salt on top is a must, it balances all the sweetness perfectly.

Ways to switch it up:

Try browning the butter for a deeper flavor, or swap in dark chocolate chips if you want it less sweet. You could even add chopped pecans for some crunch.

These are cheaper than buying gourmet cookies and honestly taste way better fresh out of your own oven.
