Custom Half Turtle/Strawberry Cheesecake
🍓🍫 Half Strawberry & Turtle Cheesecake
Customer couldn’t choose between strawberry and turtle… so I made both 💕
This 9-inch cheesecake is split down the middle—one side fresh and fruity, the other rich and chocolatey. It’s the perfect way to give someone options while still making one beautiful, custom dessert.
What I made: Half strawberry / half turtle cheesecake
Who it’s for: Mother’s Day / someone who loves variety
Why it’s meaningful: It’s personalized—two flavors in one cake makes it feel extra thoughtful and special

Cheesecake Base (9-inch)
Ingredients:
* 2 cups graham cracker crumbs
* ½ cup melted butter
* 24 oz cream cheese (softened)
* 1 cup sugar
* 3 eggs
* 1 tsp vanilla
* ½ cup sour cream
Instructions:
1. Preheat oven to 325°F
2. Mix graham crumbs + butter, press into pan
3. Beat cream cheese + sugar until smooth
4. Add eggs one at a time
5. Mix in vanilla + sour cream
6. Pour into crust and bake 50–60 minutes (center slightly jiggly)
7. Let cool, then chill completely
🍓 Strawberry Glaze (Half Topping)
Ingredients:
* 1–1½ cups strawberries (fresh or frozen)
* ¼–⅓ cup sugar
* 1 tbsp lemon juice
* 1–2 tsp cornstarch (optional, for thickening)
Instructions:
1. Cook strawberries, sugar, and lemon juice until soft
2. Mash slightly and simmer until thick
3. Add cornstarch slurry if needed
4. Cool completely before adding to cheesecake
🍫 Turtle Topping (Half)
Ingredients:
* ½ cup chocolate (melted)
* ¼ cup caramel sauce
* ½ cup toasted pecans
Instructions:
1. Spread or drizzle chocolate over half the cheesecake
2. Add caramel drizzle
3. Sprinkle toasted pecans on top
4. Finish with extra chocolate drizzle for that “turtle” look

Assembly
1. Once cheesecake is fully chilled, visually divide in half
2. Add strawberry glaze to one side
3. Add chocolate, caramel, and pecans to the other side
4. Keep toppings cleanly separated for that half-and-half look
❄️ Tips
* Chill before slicing for clean cuts
* Use a hot knife for neat slices between flavors
