Lemon Bliss Cake🍋

🍋 Lemon Bliss Cake ✨

This Lemon Bliss Cake from King Arthur Baking is hands down my favorite pound cake recipe of all time 💕

It’s buttery, ultra moist, perfectly lemony, and somehow tastes even better the next day after the glaze soaks in.

What I made: Lemon Bliss Bundt cake

Who it’s for: Mother’s Day / brunch / spring gatherings

Why it’s meaningful: It feels elegant enough for a celebration but still has that comforting homemade flavor everyone loves

... Read moreIf you’ve ever tried baking pound cakes before, you know how important it is to get that perfect moist texture without the cake becoming too dense or dry. What I love about this Lemon Bliss Cake recipe is how the lemon glaze method makes such a difference. After baking your Bundt cake and while it’s still warm, brushing the glaze repeatedly allows the lemon flavor to soak in deeply, enhancing both moisture and taste. In my experience, using fresh lemon zest and juice instead of bottled really elevates the flavor profile with a bright and natural citrus note. It’s also key to cream the butter and sugar thoroughly until light and fluffy, which helps achieve a tender crumb. For those who want to add even more indulgence, the optional lemon icing drizzle not only enhances appearance but adds a sweet tang that complements the cake’s buttery base. I often serve this cake with a side of fresh berries or a cup of Earl Grey tea, which makes for a wonderful springtime or brunch treat. Don’t forget to grease your Bundt pan well! It can be frustrating when cakes stick, and this recipe’s success partly depends on that. Lastly, I recommend baking it a day ahead if possible; letting the flavors meld overnight makes the cake taste even better. This cake suits a variety of occasions—from festive Mother’s Day celebrations to casual afternoon coffee with friends. Once you try this recipe, it might just become your go-to lemon pound cake. Enjoy the baking and the delicious results!
