Easy Thai Red Curry with Chicken🔥🍗🇹🇭

I love Thai curries because of the spice, it goes so well with a bed of rice and comforting to eat during the winter time!😋

This recipe serves about 4 people

✎Ingredients:

*1.75 lbs chicken (cubed)

*2 red bell peppers (sliced)

*2 zucchini (sliced)

*3 tbsp minced garlic

*1 thumb ginger (minced)

*5-8 lime leaves

*15-20 Thai basil leaves

*1 Thai chili (sliced) or more if you love spice

*1 can coconut cream

*3 tsp fish sauce

*1 cup water

*7 tbsp red curry paste

*salt, pepper, and sugar to taste

Directions:

1. Cook chicken for 2 mins on each side with oil on medium heat with salt and pepper

2. Add in red curry paste, ginger, and garlic, sauté for 3 mins

3. Add in veggies and sauté for 2-3 mins

4. Pour in coconut cream, water, lime leaves, Thai basil leaves, Thai chili, and fish sauce and stir

5. Let it come to a boil then reduce heat to medium and let it cook for about 10-15 mins

6. If consistency is too thick, add more water
