🧂Salt crust is not needed but it does make the skin crispier
🧂Leaving it in the fridge uncovered helps to dry the skin which makes it crispier, but also not needed
✎Ingredients:
*8 lb pork belly
*3 tsp brown sugar
*2 tsp salt
*2 tsp five spice powder
*4 tsp garlic powder
*1 tsp white pepper
*neutral oil
*rice vinegar
✎Salt Crust:
*1/2 cup kosher Salt
*1 egg white
Directions:
1. Score the meat and season
2. Poke holes on skin
3. Brush vinegar then leave in fridge
4. Pat skin dry create egg and salt mixture
5. Bake at 200 F for 30 min, making sure the salt layer has completely dried.
6. Remove the pork belly and brush off the salt.
7. Brush the skin with some neutral oil.
8. Air fry at 400 F for 30 to 40 min, until the skin is golden brown, puffed, and crispy.
9. Rest for at least 10 min before cutting
