✎Ingredients:

*1 pack SUMM dumplings (in deli section)

*1 tbsp olive oil

*1/2 small onion (diced)

*3 cloves garlic (minced)

*1.5 tbsp red curry paste

*2 cups chicken broth

*1 cup coconut milk

*5 lime leaves (lightly torn for more aroma)

*bok choy

*1/2 tbsp fish sauce

*1/2 tbsp sugar

*garnishes: lime juice, red peppers, cilantro

Directions:

1. Saute onions and garlic for 2-3 mins

2. Add red curry paste and sauté for 30 seconds to enhance the flavor

3. Add in broth, coconut milk, and lime leaves

4. Add fish sauce and sugar to taste and let that come to a light boil

5. Add in SUMM dumplings and bok choy and let it cook for 3-5 mins

6. Turn off heat, squeeze half a lime, add red peppers and cilantro for garnish
