Ingredients:

For the shrimp curry 🍤

500g large shrimp, peeled & deveined

2 tbsp olive oil or coconut oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 tbsp fresh ginger, grated

1 red chili, sliced

1 tbsp curry powder

1 tsp paprika

400ml coconut milk

2 tbsp fresh cilantro, chopped

Salt & pepper to taste

For the rice 🍚

250g basmati rice

500ml water

1 tsp salt

Instructions:

Cook basmati rice in salted water until fluffy, then set aside. In a large pan, heat oil over medium heat, sauté onion, garlic, ginger, and chili for 2–3 minutes. Stir in curry powder and paprika, cooking for 1 minute until fragrant. Add shrimp and cook for 2 minutes per side until pink. Pour in coconut milk, season with salt and pepper, and simmer for 3–4 minutes until slightly thickened. Stir in chopped cilantro. Serve hot with rice.

Notes & Variations: Add more chili for extra heat, toss in baby spinach for a veggie boost, or squeeze lime juice over before serving for a fresh kick.
