Ingredients:

2 lbs beef chuck, cut into cubes 🥩

1 lb baby potatoes, halved 🥔

3 carrots, sliced 🥕

1 onion, diced 🧅

4 garlic cloves, minced 🧄

2 tbsp tomato paste 🍅

1 tbsp Worcestershire sauce

2 cups beef broth 🍲

½ cup red wine (or extra broth) 🍷

1 tbsp fresh thyme 🌿 (plus extra for garnish)

1 tsp dried rosemary

1 tsp smoked paprika

Salt & black pepper, to taste 🧂

2 tbsp olive oil

1 tbsp flour (for coating beef)

Instructions:

1. Prep Beef: Pat beef dry, season with salt & pepper, and coat lightly with flour.

2. Brown Beef: Heat olive oil in a Dutch oven or skillet. Sear beef cubes on all sides until browned. Remove & set aside.

3. Sauté Veggies: In same pot, cook onion, carrots, and garlic until softened. Stir in tomato paste & Worcestershire sauce.

4. Build Stew: Add beef back in. Pour in broth + wine, then season with thyme, rosemary & paprika. Stir well.

5. Simmer: Cover and cook on low (stovetop/oven 2–3 hrs or slow cooker 6–8 hrs) until beef is tender and potatoes are soft.

6. Serve: Garnish with fresh thyme and serve hot with crusty bread.
