🍗 Smothered Chicken Thighs with Gravy

2 tsp Lawry’s seasoning salt, plus extra

2 tbsp garlic powder, divided

2 tbsp paprika, divided

1 packet Sazon seasoning

2 tsp cracked black pepper

¼ tsp crushed red pepper flakes

Dried parsley (for garnish)

2 cups all-purpose flour (seasoned)

Avocado or vegetable oil

2 tbsp butter

½ large white onion, sliced

7-8 garlic cloves, chopped

600 ml (2½ cups) chicken stock

½ cup heavy cream

📌 Instructions

1️⃣ Pat chicken thighs dry. Season with Lawry’s, garlic powder, paprika, Sazon, pepper, and red pepper flakes.

2️⃣ In a bowl, combine flour with the remaining seasonings. Dredge chicken thighs in seasoned flour, shaking off excess.

3️⃣ Heat oil in an oven-safe skillet. Sear chicken skin side down without moving ~5 min. Flip and sear other side ~5 min. Remove chicken and set aside.

4️⃣ Remove excess oil, leaving ~2 tbsp. Add butter, onion, garlic, and ~4 tbsp of reserved seasoned flour. Whisk and sauté 3–5 min (light roux).

5️⃣ Slowly whisk in chicken stock, simmer 3–5 min to thicken. Stir in heavy cream.

6️⃣ Return chicken (with juices) to the pan, nestling into the sauce. Bring to a boil on stovetop.

7️⃣ Cover pan and bake in 400°F oven for 45 min.

8️⃣ Remove, uncover, spoon gravy over chicken, garnish with parsley. Serve over mashed potatoes (or preferred starch).
