Caramel Popcorn

This is my measurements for a large party batch

• 4 cups light brown sugar packed

• 2 cup unsalted butter

• 1 cup light corn syrup

• 1 tsp salt

• 3 tsp pure vanilla extract

• 2 tsp baking soda

• 1 lb popped plain popcorn

1. Preheat oven to 250 degrees. Line two baking sheets with parchment paper.

2. Add brown sugar, butter, light corn syrup and salt and stir together in a medium sized pot over medium heat. Cook for about 5 minutes.

3. Finally add vanilla and soda and stir until foamy.

4. Pour over popped corn and continue stirring until well coated.

5. Spread the popcorn on the baking sheets and bake for 1 hour until set and crisp.
