Chipotle Chicken Pasta 🤤

Makes about 10 cups, 1 cup is about 294 calories

Ingredients:

- 1 bell pepper

- 1/2 yellow onion

- 3 chicken breasts

- can of chipotle peppers in adobo

- 2 cups cottage cheese

- 1 cup shredded cheese

- half squeezed lime juice

- 1 box of pasta

Recipe:

- dice bell pepper, onions, and chipotle peppers

- place into crock pot with chicken

- cook on high for about 1.5-2 hours

- when chicken is about done, boil pasta

- blend cottage cheese, shredded cheese, and lime juice until saucy (I had to add a couple splashes of water to get desired consistency)

- shred chicken when finished cooking

- pour cheese sauce and pasta in, stir and enjoy!
