Smoked ribs with Blazin star BBQ
Ingredients:
- 2-4 lbs of pork ribs (St. Louis style or spare ribs work best)
- Blazing Star BBQ Pork'n Rub
- Blazing Star All In One Rub
- Melinda's Hot Honey (optional for finishing)
Equipment:
- Smoker, pellet grill, or oven (set up for smoking)
- Meat thermometer
Instructions:
1. **Preparation:**
- If your ribs have the membrane on the back, remove it by sliding a butter knife under the membrane, then use a paper towel to grip and pull it off.
2. **Seasoning:**
- Generously season the ribs on all sides with the Blazing Star Pork'n Rub. This rub is designed to enhance the pork's flavor with a mix of spices that give a balanced sweet and spicy taste.
- Follow up by dusting the ribs with the Blazing Star All In One Rub for an extra layer of flavor. This all-purpose rub adds depth with its unique blend.
3. **Preheat the Smoker:**
- Set up your smoker, pellet grill, or oven for indirect cooking at 250°F (121°C). If using wood, choose something like apple or cherry for pork, as they offer a mild, sweet smoke.
4. **Smoking:**
- Place the ribs meat side up on the smoker grate or rack.
- Smoke for approximately 4-5 hours. The exact time can vary based on your smoker and the thickness of the ribs.
5. **Checking Doneness:**
- Use a meat thermometer to check the internal temperature. For ribs, you want to aim for about 200-205°F (93-96°C) for a tender result where the meat pulls back from the bones but still has some bite.
6. **Finishing:**
- Optionally, for the last 15-20 minutes, you can brush the ribs with Melinda's Hot Honey for a sweet and slightly spicy glaze. This step is not necessary if you prefer your ribs without sauce.
7. **Resting:**
- Once done, remove the ribs from the smoker and let them rest for about 10-15 minutes. This allows the juices to redistribute throughout the meat.
8. **Serve:**
- Slice between the bones and serve hot.
### Notes:
- The no-wrap method allows the ribs to develop a nice bark and absorb more smoke flavor, which is why we're using both rubs to enhance taste without the moisture from wrapping.
- Adjust smoking time based on your equipment and the size of your ribs. Always go by temperature rather than time for best results.
- If you're using an oven, you might need to spritz the ribs occasionally with apple juice or water to keep them from drying out too much.
