HEALTHY CARROT SOUP

if you have not tried carrot soup, you are missing out!!!! it has such a great sweet flavor and is packed with all the nutrients🤍🤍 #lemon8partner #souprecipes

ingredients:

-2 lbs peeled carrots

-1 large yellow onion

-1 head of garlic

-4 cups veggie broth

-1 tsp fresh ginger

-dash of tumeric

-dash of cumin

-salt, pepper

-olive oil

directions:

-roughly chop the carrots and onion. add to a pan along with the head of garlic. drizzle with olive oil and season with salt + pepper.

-bake at 400 degrees f for 45 minutes.

-add to pot along with veggie broth, ginger, tumeric, cumin, salt and pepper. boil for 15 minutes.

-blend in sections until it’s all creamy!!

we served ours alongside grilled cheeses made with freshly shredded gouda and white cheddar ++ a homemade garlic rosemary butter (1/2 stick butter, fresh chopped rosemary, 1/2 of the garlic head we roasted earlier, salt, pepper)
