Tomahawk Ribeye w/ Herb Butter

Tomahawk Ribeye with an herb butter.

Ingredients:
•Tomahawk Ribeye/Cowboy Ribeye atleast 2lbs.
•Salt
•Pepper
•Butter
•Minced Garlic
•Rosemary
•Thyme
•Smoked Paprika
•Minced Onion
Directions:
1)Get that ribeye out and Season it generously with Salt and pepper.
2)Let it come up to room temp 70°
3)Preheat your oven to 225°
4)Place your ribeye on a sheet pan with a wire rack
5)If you have a meat probe insert it now (in the middle not touching the bone).
6)We are going to slowly bring the internal temperature of the ribeye to 120°
7) Once you reached 120°, take the ribeye out of the oven, and grab a large pan/skillet/Cast iron.
8)On high heat, wait until the pan gets hot, using the water method to check and see if the pan is ready to sear that Beautiful cut of meat.
9)If the pans ready, we are going to sear each side for 2-3 minutes
10)Once seared remove from heat, place on a cutting board and let it rest for 10-15 minutes, here you can add your Herb butter to the top of the ribeye.
11)Once rested, we are ready to cut,
Grab the bone, turn the steak upright and follow the bone all the way down, and then you can cut the rest of the steak.
For the Herb Butter:
Combine the following ingredients into a small Mixing bowl:
Butter, minced onion, minced garlic, rosemary, thyme, smoked paprika, salt and mix until well combined.
Place Herb butter onto a sheet of plastic wrap, roll up and set in the fridge until ready to place on steak.
