What I ate last week
As a stay-at-home mom of four, finding the time and energy to prepare meals that everyone enjoys can be a juggling act. Last week, I embraced simple but flavorful dishes that not only satisfied my family's taste buds but also kept cooking stress at bay. One of my favorites was shrimp noodles with onions and sprouts, which reminded me of chow mein – the noodles were Japanese-style tonkotsu shoyu ramen, refrigerated for freshness, making the dish easy to whip up on busy days. I also enjoyed reinventing leftovers, turning ground beef into breakfast tacos and shrimp into spring rolls. These meals prove that creativity in the kitchen doesn’t require a lot of time or complicated ingredients. Another highlight was a snack plate with sourdough crackers, prosciutto, goat cheese, and apricot jam – perfect for a quick bite or sharing with family during downtime. Having a designated breakfast-for-dinner night once a week was something I looked forward to as an adult with free will, enjoying comforting favorites like microwave nachos with a bit of magic spoon twist. Choosing to cook at home instead of ordering takeout not only helped me save money but also allowed me to monitor my family’s nutrition better. Cooking as a mom means balancing simplicity, taste, and variety. These meals reflect my everyday life as a #momof4 and #sahm, proving that with a bit of planning, delicious and wholesome meals can be part of any busy home's routine. If you’re a mom like me looking for adaptable meal ideas, don’t hesitate to experiment and make mealtime your own special moment.
