Avocado egg salad
INGREDIENTS
I don’t really have measurements for y’all (really just guesstimating) and this one seems kind of weird but it’s DELICIOUS
▪️12 Hard boiled eggs
▪️6-8 pieces of bacon cooked and chopped (will always use thick cut)
▪️1-2 hand fulls of cherry tomatoes sliced small
▪️3-4 ripe avocados(the riper they are the creamier the salad and less mayo you need)
▪️I measure the pickles with my heart (you can chop them or leave them whole)
▪️just a bit of mustard for tang I use maybe a tablespoon(my husband hates mustard and can’t tell it’s in there)
▪️mayo to taste. It just depends on how creamy you want your salad.
This can be eaten multiple ways. As a sandwich, lettuce wrap, my toddler eats it like a dip with some protein chips. #eatwiththeevans #lunchrecipes #avocado #quickrecipes #easyrecipes
Avocado egg salad is a versatile and nutritious meal option that combines the richness of ripe avocados with the protein-packed goodness of hard-boiled eggs. Rich in vitamins such as B2, B12, and essential nutrients, eggs provide a powerful source of energy and support brain and muscle function. When combined with the healthy fats from avocados, this salad promotes heart health and sustained fullness. Including thick-cut bacon introduces a savory depth and crispy texture, complementing the creamy avocado and eggs. Cherry tomatoes add a refreshing, juicy burst of flavor and deliver antioxidants like lycopene, which are beneficial for skin and overall health. Pickles bring a tangy crunch, balancing the richness of the salad, while a subtle addition of mustard infuses the dish with a mild tang without overpowering the flavors. Mayo is used to achieve the desired creaminess but can be adjusted to taste, especially with the creaminess attributed to ripe avocados. This avocado egg salad is not only quick and easy to prepare but also highly adaptable. It can be served as a sandwich filling, wrapped in crisp lettuce for a low-carb option, or used as a dip for protein chips, making it suitable for different eating preferences and occasions. The use of fresh, whole ingredients ensures a wholesome meal packed with vitamins and minerals, supporting a balanced diet. For best results, using grade A large brown eggs ensures quality and freshness, which impacts the texture and taste of the salad. When selecting avocados, choosing those that are ripe—soft to the touch—maximizes the creamy consistency, reducing the need for excessive mayonnaise. This salad is an excellent option for quick lunches, easy recipes enthusiasts, or those looking to add more nutrient-dense foods into their routine.

This looks surprisingly good. I'm usually a "sad desk lunch" kinda person, but I might try this.
