Homemade Bagels- recipe below 👇🏼

-1 1/2 cups warm water

-2 1/4 teaspoons yeast

-1 tablespoon sugar

•Stir and let sit for 5 minutes or until there’s a foamy layer at the top

-540 grams bread flour

-2 teaspoons salt

•Mix together well

•Add yeast mixture to flour

•15 big stirs

•10 claudettes (scoop and punch with knuckles)

*if dough is shaggy, let sit for 10 minutes

•Dump mixture on a clean flat surface

•Mix on level 4 for 5 minutes or 10 minutes of hand kneading (I hand knead everything)

•Roll dough into ball and rub some olive oil on it, put dough ball in a large bowl, cover and let sit until it doubles in size

•Cut dough into 8-9 bagels

•Form into balls, poke thumbs through the middle and mold into a bagel

•Cover with a towel and let sit for 20 minutes

•Bring 12 cups of water with a tablespoon of sugar to a boil (make sure water is deep enough for bagels to float while boiling them)

•Boil bagels for 1 minute on each side

•Give bagels an egg wash then add toppings like cheese, salt, everything seasoning, cinnamon sugar, etc.

•Bake at 425° for 20-25 minutes or until golden brown

Let the bagels cool completely before storing- I found that storing them in a brown paper bag and placing them in an air tight container works great!

They are delicious fresh out of the oven.. enjoy ☺️

**I add my inclusions like blueberries when I form the ball into bagel form

**I cover and let rise in my oven with the light on
