One of Singapore’s best rooftop dining experience

VUE Bar and Grill has unveiled its highly anticipated Spring Menu, celebrating exceptional ingredients from source to plate. Under the guidance of Executive Chef Sam Chin, VUE partners with ORCA, the region’s premier supplier of world-class produce, to spotlight two standout stars — Akaroa King Salmon and Stone Axe Wagyu Beef.

We began with elegant bites like the Salmon Rilette Tartlet, light and creamy with bursts of briny ikura, and the Stone Axe Wagyu Beef Tartare on Toast, rich and buttery with deep savoury notes. The Holland white asparagus was tender and delicate, lifted by bright citrusy hints of fermented lemon and nutty tahini.

One of the highlights of the evening was the Akaroa salmon mi-cuit, gently cooked to a silky texture and paired with cauliflower purée and caviar for a luxurious, melt-in-your-mouth finish — truly living up to its reputation as the “wagyu of the sea.”

Then came the star of the show — the Stone Axe Wagyu beef duo.

The striploin was beautifully seared with a deep, savoury flavour, while the braised beef cheek was incredibly tender and comforting, coated in a rich mushroom sauce that tied everything together. The wild forest mushroom risotto was earthy and creamy, packed with umami from porcini and chestnut mushrooms.

Dessert ended on a playful note with Chitose Maize, paired with cereal milk mousse and mugicha tea ice cream — a unique, nostalgic combination that was both comforting and refreshing.

A refined seasonal menu where premium ingredients truly take centre stage. Great food, stunning skyline views, and an atmosphere that makes any evening feel a little more special. Definitely one to save for your next date night, celebration, or when you simply want to treat yourself.
