Coarse salt
¼ teaspoon cayenne

Vegetable oil, for frying
Honey, for serving
Mix dry ingredients:
In a large bowl, stir together flour, cornmeal, sugar, baking powder, 1 1/2 teaspoons salt, and cayenne.
Add milk and egg, then corn:
Add milk and egg to flour mixture and stir together to create a batter. Add corn and fold to combine.Heat oil:
Heat 4 inches oil in a large heavy-bottomed pot or Dutch oven over high heat until a deep-fry thermometer reaches 375°F.
Scoop and cook fritters:
Working in batches, using a small ice cream scoop or two spoons, drop batter by the tablespoon into the oil. Cook, turning occasionally, until cooked through and deep-golden brown, 1 to 2 minutes; adjust heat as needed to keep oil temperature between 350 and 360 degrees.Remove from oil, season, and serve:
Transfer fritters to a paper towel-lined baking sheet. Season to taste with salt, and serve immediately with honey. #fritters #corn #foodrecipe #marthastewart #Lemon8Diary #foodideas
Corn fritters are such a delightful treat that combine the natural sweetness of corn with a crispy fried exterior, making them perfect for a snack or side dish. I've tried making them several times, and one thing that really changes the experience is adjusting the size of the fritters. Smaller fritters cook quickly and have an even crunch all around, but if you prefer bigger 'balls' of fritters like mentioned, you just need to increase the cooking time slightly to ensure they are cooked through without getting burnt. Using fresh corn kernels straight from ears of corn really elevates the flavor, giving a burst of natural sweetness and a nice texture contrast with the batter made from flour and yellow cornmeal. The addition of a little cayenne pepper adds a subtle kick that complements the sweetness, balancing the flavor profile well. When frying, it's important to maintain the oil temperature around 350-375°F. If the oil is too cool, the fritters will absorb excess oil and become greasy. Too hot, and the outside will burn before the inside cooks fully. Using a deep-fry thermometer helps maintain this temperature range. Serving the corn fritters with honey adds a delicious touch of sweetness that pairs wonderfully with the spicy and savory notes. You can also experiment with other toppings like maple syrup, powdered sugar, or even a dollop of sour cream mixed with fresh herbs to create different flavor experiences. Overall, corn fritters are incredibly versatile and easy to make at home. My tip: don’t rush the frying process, and always adjust size and frying time to your preference. They'll turn out golden, crispy, and utterly delicious every time.
