Comforting homemade dinner • Serves 4
Ingredient & Portion:
4 bell peppers (mixed colors), tops removed & seeds cleaned
1 lb lean ground hamburger
1 cup cooked rice
1 cup tomato sauce Or (1can)
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
Salt & pepper to taste
1 cup shredded cheese (cheddar, mozzarella, or blend)
Detailed Steps:
•Preheat oven to 375°F.
•Place hollowed bell peppers in a Dutch oven or baking dish and bake for 15–20 minutes until slightly tender.
•While peppers are in the oven, cook ground hamburger in a pan over medium heat until browned. Drain excess grease.
•Stir in cooked rice, tomato sauce, and seasonings; simmer a few minutes until well combined
•Remove peppers from the oven and carefully fill each with the meat and rice mixture.
•Return stuffed peppers to the Dutch oven, cover, and bake for 20–25 minutes.
•Uncover, add cheese on top, and bake another 5–10 minutes until melted and bubbly.
Additional Tips/Notes:
Pre-baking the peppers helps them cook evenly and become extra tender.
Covering the dish keeps the peppers moist while baking.
Add extra sauce on the bottom of the pan to prevent sticking and add flavor.
Using different colored peppers adds sweetness and flavor.
Swap rice for cauliflower rice for a lower-carb option.
Leftovers reheat well and taste even better the next day.
