Caribbean Saltfish Fritters

Salted cod or pollock easy to find a supermarket
Boil 2-3 times to get rid of excess salt
Rinse with cold water once desired taste is reached
Mince fish
Tsp of baking powder
1/2 tsp of fish or all purpose seasoning
Black pepper
Chopped scallion, onion, tomato, scotch bonnet popper and thyme.
Just enough water to give a pancake like consistency
And fry !
The amount of flour depends on the amount of fish you are using but generally you would use about 1 cup and 1tsp for a 1lb pack
