Was cooking some field peas in slow cooker and tried Jiffy corn muffin mix on top after cooked for a couple of hours.

Got a giant corn muffin. Just has peas on bottom. Bit of mix was in peas but that's way I like'em anyway.

Using a Jiffy corn muffin mix on top of slow-cooked field peas not only adds a golden, fluffy texture but also introduces an enjoyable contrast between savory and slightly sweet flavors. The slow cooking process allows the peas to soften gradually, while the corn muffin mix forms a crust on top. For the best results, it's important to first cook the field peas in the slow cooker with some seasoning like salt, pepper, and perhaps a bit of smoked meat or bacon to impart rich flavor. After a couple of hours, sprinkle the corn muffin mix evenly over the top and allow it to bake through for an additional period, typically 30-45 minutes, depending on your slow cooker’s heat settings. This method ensures the corn muffin bakes atop the peas without becoming soggy, creating a giant corn muffin that’s moist inside with a slightly crispy top. Many cooks enjoy this style because it’s both hearty and convenient, integrating protein-rich legumes with quick-cook corn muffin batter. The bit of batter that seeps into the peas adds moisture and enhances the dish’s overall texture. Variations can include adding cheese into the corn muffin mix or mixing in herbs like thyme or rosemary for added aroma. This dish makes a great side for barbecue dinners or can stand alone as a satisfying vegetarian comfort food. Remember, slow cooker timings can vary, so monitoring the corn mix’s bake progress is key. This simple yet innovative recipe is a great example of how traditional Southern ingredients can be reinvented in a slow cooker for a deliciously easy meal that feeds a crowd.
