Mexican style black bean soup
Easy to make! I used a crock pot!
I added my pound of dry beans, half an onion, my cumin, garlic, salt and pepper to the crock pot and added about 2 cartons of chicken broth (I may have been short and had to add water instead of one carton for this specific recipe). I also added the juice of a lime, and chili powder. I cooked this on low for about 8 hours and then used my immersion blender to get to my desired consistency. Add water if it’s too thick.
