A pot roast with lots of vegetables

A comforting slow cooked pot roast loaded with vegetables! Perfect for a weeknight easy dinner. To make this pot roast I put carrots, celery, onions, potatoes, Delicata squash, and mushrooms. I added some beef broth, a packet of brown gravy,fresh thyme and cooked for 8 hours in low in the crockpot. The meat just falls apart! Comfort in a bowl! Give this pot roast a try.
