I usually dedicate a Sunday afternoon to cooking, and this dish is always on rotation. It's truly a game-changer for staying on track with healthy eating without sacrificing flavor. For this recipe, I start with fresh salmon fillets. I pat them dry, which helps them get a nice sear if you're pan-frying, or a lovely crust if you're baking. Then, I generously season both sides with good quality lemon pepper seasoning. A little drizzle of olive oil, and sometimes a squeeze of fresh lemon juice, really brings out the flavors. I like to bake mine at 400°F (200°C) for about 12-15 minutes, depending on the thickness of the fillet, until it's perfectly flaky and cooked through. It’s so satisfying to pull a perfectly cooked salmon out of the oven! This simple method ensures a consistently tasty result every time, making it perfect for a quick cooking vlog segment. The beauty of lemon pepper salmon is how versatile it is for meal prepping. Once cooked, I let it cool completely before portioning it out into individual containers. This prevents condensation and keeps the salmon from getting soggy. I store it in airtight containers in the fridge, and it stays fresh for about 3-4 days. When I’m ready to eat, a quick reheat in the microwave or oven brings it back to life. Sometimes I even flake it cold over a salad for a light lunch, which is another great meal prep hack! Speaking of sides, I always pair my lemon pepper salmon with some delicious and easy accompaniments. My absolute favorite is garlic parmesan mashed potatoes. I boil Yukon Gold potatoes until tender, then mash them with a splash of warm milk, a knob of butter, plenty of minced garlic, and a generous sprinkle of grated parmesan cheese. A little salt and pepper, and you have a creamy, flavorful side that complements the salmon beautifully. For a green vegetable, steamed or roasted green beans are perfect.
