Breakfast for weight loss
Eggs are packed full of fiber! I’m a sucker for a good runny egg sandwich. Since I’m trying to toss out many breads and wheats from my diet, however, I thought I would bake these! Tossing these bad boys into the oven is a piece of cake for a busy momma, and it’s a good alternative to grab in something out and about. Here’s what you do!!
Recipe:
Enough eggs to fill each pocket in a muffin tin with 1 egg
Avacado oil
Seasonings of desire.
1) preheat the oven to 350
2) coat muffin tin in some avacado oil. Eggs love to bake to things, but this gives a bit of crunch on the outside too!
3) crack an egg in each pocket of muffin tin. Add seasonings such as salt, black pepper, or red pepper chilli flakes.
4) bake eggs for between 10 to 15 minutes; depending on the desired consistency of the egg
RUNNY YOLK: 10-11 minutes. (If it’s jiggly on top, that’s okay! Pull it out and let it rest in the pan)
OVER MEDIUM: 11-13minutes
FULLY COOKED: 14-15 minutes
5) pull out of oven and sprinkle with cheese, garnish with chives, or Tabasco! Make it your own. Very versatile bake!
