Bell pepper nachos
Made these to try to jump start healthier alternatives before the new year. These were a hit! Our son loves nachos and he requested it for dinner! Everyone felt refreshed after eating these instead of bloated. With our homemade chipotle ranch, we will be remaking in the future!
🍳ingredients🍳
~6 bell peppers
~1.24 lbs of ground beef (Costco Promo)
~2 cups cheese of choice
~can of beans - we tried refried beans and they were bomb with lime juice!
~Greek yogurt (we got spicy ranch seasoning for a healthy alternative for the saucy child and it makes for a good sauce for these)
~any additional toppings you may like (tomatoes, onions, avocado, cilantro are some good ones!)
Preheat oven to 375
Cook up taco meat by combining ground beef and taco seasoning
Chop 6 bell peppers (any color of your choice) into 6 to 8 boats
Pick a can of beans
Use either 2 cups of shredded cheddar or Mexican blend cheese!
Grab two cookie sheets
Place pepper boats on cookie sheets, cover with taco meat and beans. Add in chopped onions and cilantro for flavor. Cover with cheese and bake for roughly 10 minutes in the oven.
Top with chipotle ranch, hot sauce and other additional garnishes!
