... Read moreKaya toast is truly a unique culinary gem that reflects Singapore’s rich cultural tapestry. Having enjoyed it countless times at local kopitiams, I found the story behind it even more delicious. What makes kaya toast special is not just the sweet coconut-egg spread but also how it symbolizes the creativity of Hainanese cooks during Singapore’s colonial era. These cooks ingeniously adapted the British tradition of jam on toast into something distinctly local by using ingredients like coconut milk, eggs, sugar, and fragrant pandan leaves. Interestingly, there are two main types of kaya: Hainanese kaya, which has a deep brown color due to caramelized sugar, and Nyonya kaya, which gets its greenish hue from pandan. This difference highlights the fusion of culinary techniques and local flavors. Today, kaya toast is inseparable from the classic Singaporean breakfast scene, usually served with a generous slab of cold butter and soft-boiled eggs alongside a strong cup of kopi (local coffee). This snack isn’t just food; it carries nostalgia and comfort, connecting generations. If you ever get the chance, I highly recommend visiting a traditional kopitiam to experience the authentic kaya toast culture. Seeing how this simple yet flavorful treat has stood the test of time makes every bite more meaningful. It’s a reminder of Singapore’s dynamic history and the warmth of its vibrant food scene.

New Nanyang Kopitiam|This Ah Ma kaya toast mustry!
Family brunch around Bencoolen, we checked out this newly opened (about 1 month) spot — Wanglee Cafe ☕️, located inside Sunshine Plaza (honestly, I wouldn’t come to this mall if not for this cafe 😆). This is not a Western cafe, but a Nanyang-style kopitiam serving local SG–MY comfort food.
